- 2 baguettes of bread
- 2 tomatoes
- 1 cucumber
- 100 g baby greens (spinach, rocket, etc.)
- 4 raw button mushrooms
- 2 hard-boiled eggs
- Salt
- Pepper
- olive oil
- Balsamic vinegar
Preparation steps
- Wash and dry the young shoots.
- Slice the tomatoes.
- Peel and thinly slice the cucumber.
- Clean the mushrooms and cut into thin slices.
- Shell the hard-boiled eggs and cut into slices.
- Cut the baguettes in half lengthways.
- Place a layer of baby greens on the bottom half of each baguette.
- Add slices of tomato on top of the baby greens.
- Place slices of cucumber on top of the tomatoes.
- Add slices of raw mushrooms.
- Arrange the slices of hard-boiled egg on top of the mushrooms.
- Season with a little salt and pepper.
- Drizzle with olive oil and balsamic vinegar.
- Close the baguettes with the top half of the bread.
- If necessary, cut the baguettes into individual sandwiches.
- Serve immediately with a side dish of your choice.
