Ingredients for two sandwiches
- 6 slices of Spelt Cob Loaf 450 g
- 400 g large prawns
- 1 ripe avocado
- 1 lettuce heart
- 2 spring onions
- 2 celery sticks
- ½ red onion
- 1 lime
- A few sprigs of chives
- Butter
- Salt, pepper
- Cocktail sauce
- Coriander
Preparation steps
Method
- Brown the slices of bread in a frying pan with butter for a few minutes.
- Cut the prawns in half lengthwise.
- Dice the avocado.
- Finely chop the spring onions, celery and onion.
- Mix together the avocado, spring onions, celery, coriander, red onion, lemon zest and juice, then adjust the seasoning.
Making the sandwich
- Generously spread the cocktail sauce inside the first slice.
- Add the prawns, then top with the avocado and lettuce tartare.
- Add a second slice and repeat.
- Close the sandwich with a third slice.
- Sprinkle chopped spring onions and fresh herbs to finish.
