  • Khorasan wheat and ancient seeds bread
  • Sliced red cabbage
  • Fresh cheese
  • Chickpeas (or hummus)
  • Falafel (or vegetable dumplings)
  • Red cabbage sprouts
  • olive oil
  • Salt
  • Pepper

  • Start by heating the vegetable balls or falafels according to the instructions on the packet.
  • Meanwhile, slice the bread on the bias into slices about 1.5cm thick.
  • Spread the fromage frais generously on both slices.
  • Place a handful of sliced red cabbage on top of the fromage frais.
  • Cut the falafels (or vegetable balls) in half.
  • Place them on the bed of red cabbage.
  • Lightly crush the chickpeas with a fork and season with salt and pepper before adding to the sandwich.
  • Add a few sprouts of red cabbage for freshness and crunch.
  • Close the sandwich with the top half of the bread.
  • Add any condiments or sauces you like, such as tahini, mint yoghurt or lemon sauce.
