- Khorasan wheat and ancient seeds bread
- Sliced red cabbage
- Fresh cheese
- Chickpeas (or hummus)
- Falafel (or vegetable dumplings)
- Red cabbage sprouts
- olive oil
- Salt
- Pepper
Preparation steps
- Start by heating the vegetable balls or falafels according to the instructions on the packet.
- Meanwhile, slice the bread on the bias into slices about 1.5cm thick.
- Spread the fromage frais generously on both slices.
- Place a handful of sliced red cabbage on top of the fromage frais.
- Cut the falafels (or vegetable balls) in half.
- Place them on the bed of red cabbage.
- Lightly crush the chickpeas with a fork and season with salt and pepper before adding to the sandwich.
- Add a few sprouts of red cabbage for freshness and crunch.
- Close the sandwich with the top half of the bread.
- Add any condiments or sauces you like, such as tahini, mint yoghurt or lemon sauce.
