List of ingredients
- Khorasan wheat and ancient seeds bread
- Yellow, red and grained cherry tomatoes
- Cocktail tomatoes
- Cucumber
- Currants
- Pine nuts
- Burrata cheese
- Basil
- Apricot or peach quarters
- Coriander sprouts
- Marinade of lime, olive oil, salt and pepper
Preparation steps
- Slice the bread on the bias to obtain slices about 1.5cm thick.
- Drizzle olive oil over the slice of bread.
- Toast one side of the slice of bread in the oven on the grill setting for about 5 minutes.
- Slice the cocktail tomatoes and cucumbers.
- In a large salad bowl, combine the cherry tomatoes, cocktail tomato slices, cucumber slices and redcurrants.
- Cut the peach or apricot into quarters.
- Add the apricot or peach quarters, torn fresh basil leaves and coriander shoots.
- Add the Burrata quarters to the salad.
- In a small bowl, prepare the marinade by mixing the lime juice, olive oil, salt and pepper.
- Drizzle the marinade over the salad and toss gently to coat all the ingredients.
- Sprinkle the lightly toasted pine nuts over the top of the salad to add a crunchy texture.
- Serve the salad with slices of toasted bread on the side.
- If desired, transform this salad into generous slices of bread.
