  • 10 croissants
  • 300 g cooked ham cut into thin strips
  • 150 g mature Cheddar
  • 150 g fromage frais
  • 35 g mustard
  • 3 sucrines


PICKLED CARROTS

  • 3 carrots
  • 14 g white wine vinegar
  • 28 g dry white wine
  • 7 g sugar
  • ½ red onion
  • 4 g coriander seeds
  • 1 sprig of thyme
  • Salt and pepper

HOW TO MAKE THE PICKLED CARROTS

  • Peel the carrots and cut into slices or sticks.
  • In a saucepan, boil the vinegar, sugar and white wine, then add the finely sliced onions and cook for 2 minutes.
  • Fill a jar 2/3 with carrots and pour in the boiling water to cover them.
  • Close tightly, leave to cool and store in a cool place for one week before using.

 

MAKING THE SANDWICH

  • Cut the croissant in half lengthways.
  • Make the fromage frais and mustard mix, adjust the seasoning.
  • On the croissant base, spread the mustard mixture and arrange a few lettuce leaves to add freshness and crunch.
  • Cover the salad with the sliced cooked ham.
  • Add the pickled carrots for a touch of acidity to the nicely arranged ham.
  • Add shavings of mature Cheddar to the top of the ham.

 

TO FINISH

  • Pipe the mustard mixture inside the croissant.
  • Carefully put the top on the croissant.
  • Option: slightly reheat the sandwich so that the Cheddar melts a little.
