List of ingredients
- 10 croissants
- 300 g cooked ham cut into thin strips
- 150 g mature Cheddar
- 150 g fromage frais
- 35 g mustard
- 3 sucrines
PICKLED CARROTS
- 3 carrots
- 14 g white wine vinegar
- 28 g dry white wine
- 7 g sugar
- ½ red onion
- 4 g coriander seeds
- 1 sprig of thyme
- Salt and pepper
Preparation steps
HOW TO MAKE THE PICKLED CARROTS
- Peel the carrots and cut into slices or sticks.
- In a saucepan, boil the vinegar, sugar and white wine, then add the finely sliced onions and cook for 2 minutes.
- Fill a jar 2/3 with carrots and pour in the boiling water to cover them.
- Close tightly, leave to cool and store in a cool place for one week before using.
MAKING THE SANDWICH
- Cut the croissant in half lengthways.
- Make the fromage frais and mustard mix, adjust the seasoning.
- On the croissant base, spread the mustard mixture and arrange a few lettuce leaves to add freshness and crunch.
- Cover the salad with the sliced cooked ham.
- Add the pickled carrots for a touch of acidity to the nicely arranged ham.
- Add shavings of mature Cheddar to the top of the ham.
TO FINISH
- Pipe the mustard mixture inside the croissant.
- Carefully put the top on the croissant.
- Option: slightly reheat the sandwich so that the Cheddar melts a little.
