- 1 baked pain au chocolat
- 4 mini croissants
- Caster sugar
- Chocolate crème pâtissière
- Crème mousseline
- Almonds
- Pistachios
- Melted chocolate
Preparation steps
- Flatten the pain au chocolat and bake between 2 sheets then use it as a base instead of nougatine.
- Halve the 4 mini croissants and fill with chocolate crème pâtissière.
- Melt sugar to make a caramel and drizzle over the mini croissants.
- Pipe crème mousseline between the croissants.
- Dip a few almonds and pistachios into the caramel to form strands.
- Assemble the pièce montée with mini croissants.
- Drizzle chocolate onto the crème mousseline to finish.
