- 6 slices of Kürbiskern loaf
- 1 chicken breast
- 4 thick slices of smoked bacon
- 2 medium tomatoes
- 4 thin slices of Swiss cheese
- 1 handful of rocket
- 1/2 garlic glove
- 20 g butter
- 4 tbsp mayonnaise
- 1 tbsp brown sugar
- 1 tbsp olive oil
- 1 teaspoon lemon juice
- Salt & pepper
Preparation steps
- Season the chicken breast with salt and pepper. Fry in the pan with 1 tbsp olive oil and butter, then bake at 200°C for 15-20 minutes. Leave to cool and slice thinly.
- Put the slices of bacon on a baking tray lined with baking paper. Sprinkle with brown sugar and bake at 180°C for 10-12 minutes until crispy. Put to one side.
- Cut the tomatoes in half, season with oil, salt and pepper and bake at 180°C for 15 minutes. Mash with a fork to obtain a jam-like texture.
- Make the roasted garlic mayonnaise by cutting off the top half of the garlic bulb, then drizzle with olive oil and wrap in aluminium foil. Bake at 180°C for 30 minutes. Mash the garlic and mix it with the mayonnaise.
- Butter each slice of bread and brown in a hot pan until nicely toasted.
- Mix the rocket with a drizzle of olive oil, lemon juice, salt and pepper.
- On the first slice of bread, spread the garlic mayonnaise, then add the chicken slices.
- Add the second slice of bread, then add the tomato confit and the slices of cheese.
- Add the slices of caramelised bacon, then the seasoned rocket.
- Spread the final slice of bread with the garlic mayonnaise, close the sandwich and cut in half. Serve immediately!
