  • 10 croissants
  • 200 g firm button mushrooms
  • 150 g mushroom tapenade
  • 200 g fromage frais
  • 10 slices of mountain ham
  • 100 g lamb’s lettuce
  • 1 bunch of parsley
  • Salt and pepper

HOW TO MAKE THE MUSHROOM MIX

  • Mix together the fromage frais, mushroom tapenade, fresh parsley and season.

MAKING THE SANDWICH

  • Cut the croissant in half lengthways.
  • Spread the mushroom mixture onto the inside of both croissant halves.
  • Slice the ham into small strips and put on top.
  • Cover with grated mushrooms using a mandoline, then add a few slices of lamb’s lettuce.
  • Put the top on the croissant.
