  • 2 croissants
  • 120g cooked chicken
  • breast
  • 100g zucchini
  • 50g feta
  • 30g black olive
  • Lemon yoghurt sauce:
    • 40 g Greek yoghurt
    • 1 tsp of lemon juice + lemon zest 
    • salt & pepper
    • fresh herbs

  • Grill the chicken breast and cut into strips.
  • Fry the zucchini with a drizzle of olive oil, salt and pepper
  • until golden but still slightly crunchy.
  • Mix all the ingredients for the lemon yoghurt sauce.
  • Assemble the sandwich:
  • Cut the croissant in half
  • Spread the sauce on the croissant
  • Add the zucchini and chicken strips
  • Garnish with black olives
  • Sprinkle with crumbled feta cheese
  • Put the top on the croissant
  • Serve warm with a colourful summer salad.
