  • 1 focaccia bread
  • 3 eggs
  • 1 avocado
  • 100 g smoked salmon
  • 50 g rocket
  • 2 to 3 artichoke hearts 
  • Olive oil
  • Salt
  • Black pepper

  • Bake the focaccia in the oven or reheat it so that it is ready to use.
  • Boil the eggs until cooked, then mash. 
  • Remove the stone and skin from the avocado then mash it. 
  • Mix the two preparations, adding a sufficient quantity of olive oil, salt and crushed black pepper.
  • Wash the rocket and put to one side. 
  • Cut the artichokes marinated in oil into small pieces. 
  • Mix everything with olive oil, crushed black pepper and salt, then put to one side.
  • Cut the focaccia into three equal parts and lightly coat the surface of each piece with olive oil.
  • Spread the egg-avocado mix evenly on the first slice of bread. 
  • Add the second slice of focaccia on top, then evenly arrange the smoked salmon slices. Cover with the final slice of bread.
