- 5 Nova Baguettes 280 g
- 5 avocados
- 800 g braised chicken fillet, thinly sliced
- 300 g diced red pepper
- 4 chopped red onions
- 100 g pea shoots
- 10 tablespoons of mayonnaise
- 5 teaspoons of turmeric
- 5 lemons
- Salt and pepper
Preparation steps
- Slightly grill the slices of bread in a frying pan or toaster.
- Make the sauce by mixing together the mayonnaise, turmeric, a pinch of salt and a drizzle of lemon juice.
- Cut the avocado into thin slices.
- Thinly slice the red onions.
- Season the braised chicken slices with a pinch of salt and pepper.
- Spread the mayonnaise/turmeric sauce on the inside of both slices of toasted bread.
- Place the chicken slices on one of the slices of bread.
- Add the avocado slices, the diced red pepper and the red onion slices on top of the chicken.
- Sprinkle pea shoots over the top for a touch of freshness.
- Close the sandwich with the second part of bread, press lightly and serve immediately.
