  • 5 Nova Baguettes 280 g
  • 5 avocados
  • 800 g braised chicken fillet, thinly sliced
  • 300 g diced red pepper
  • 4 chopped red onions
  • 100 g pea shoots
  • 10 tablespoons of mayonnaise
  • 5 teaspoons of turmeric
  • 5 lemons
  • Salt and pepper

  • Slightly grill the slices of bread in a frying pan or toaster.
  • Make the sauce by mixing together the mayonnaise, turmeric, a pinch of salt and a drizzle of lemon juice.
  • Cut the avocado into thin slices.
  • Thinly slice the red onions.
  • Season the braised chicken slices with a pinch of salt and pepper.
  • Spread the mayonnaise/turmeric sauce on the inside of both slices of toasted bread.
  • Place the chicken slices on one of the slices of bread.
  • Add the avocado slices, the diced red pepper and the red onion slices on top of the chicken.
  • Sprinkle pea shoots over the top for a touch of freshness.
  • Close the sandwich with the second part of bread, press lightly and serve immediately.
