Vegetable Soup
- 80 g fresh spinach
- 50 g broccoli
- 50 g green beans
- 30 g peas
- 1 tablespoon of chopped fresh parsley
- ½ garlic clove
- 5 cl vegetable broth
- ½ tablespoon of olive oil
- 1 pinch of salt and pepper
- Squash seeds
The toast
- 3 slices of Large Pochon Loaf 700 g
- 80 g cooked sweet potato
- 40 g cooked chickpeas
- ½ tablespoon of tahini
- ½ tablespoon of lemon juice
- ½ tablespoon of olive oil
- 1 pinch of cumin
- Salt, pepper
- Shoots (alfalfa, beetroot, etc.)
Preparation steps
Cold green vegetable soup with squash seeds
- Cook the broccoli, green beans and peas for 10 minutes.
- Mix together the cooked vegetables, fresh spinach, parsley, garlic, vegetable broth, olive oil, pinch of salt and a little pepper.
- Put the soup in the refrigerator for 30 minutes to chill.
- Pour the soup into a bowl. Sprinkle with squash seeds to give crunch.
Open sandwich : sweet potato and shoots hummus
- Mix together the cooked sweet potato, chickpeas, tahini, lemon juice, olive oil and spices until the texture is smooth.
- Adjust the seasoning.
- Spread on the slices of bread.
- Decorate with shoots for serving.
