  • 15 x 50 g croissants
  • 33.5 g cream cheese
  • 160 g whipping cream
  • 70 g icing sugar
  • 5 egg yolks

  • Prepare a 4-inch round hollow cake tin.
  • Each bun requires 3 x 50 g croissants.
  • Once the croissants have defrosted completely, put them in a mould and bake in the oven.
  • Bake at 170°C for 24 minutes, then take out of the oven and leave to cool.
  • Mix together the cream cheese, whipping cream and icing sugar.
  • Put this filling in a piping bag. Squeeze into the centre of the bun.
  • Spread the egg yolk evenly over the filling.
  • Put in the oven and bake again at 230°C for 3 minutes.
  • Decorate with fresh fruit, walnuts and icing sugar.
