- 3 Bun’n’Rolls
- Lemon curd
- 4 lemons
- 1 egg
- 3 egg yolks
- 150g sugar
- 15g corn flour
- Italian Meringue
- 100g of water
- 150g sugar
- 3 egg whites
Zubereitungsschritte
- Zest and juice the lemons.
- Mix the lemon juice and zest with the dry ingredients, then add the egg yolks and one whole egg.
- Cook over a medium heat, stirring constantly, until thickened and smooth.
- For the meringue : Pour the water in the pot, add the sugar. Bring the mix to 118°C.
- In a separate bowl; slightly whip the egg whites before adding the hot sugar syrup.
- Mix the meringue until it is cools to room temperature.
- Fill the Bun of lemon curd.
- Top the bun with the meringue when it is ready. Caramelize the Meringue with a blowtorch, then Enjoy !
