- 1 Caractère Half-Baguette
- 50g horseradish sauce
- 90g cooked red beetroot
- 25g Chioggia beetroot
- 20g hard boiled eggs
- 50g cooked potatoes
- 15g lettuce heart
- Chives
Preparation steps
- Slice the raw Chioggia beetroot and dice the cooked red beetroot
- Cut the potatoes into sticks
- Sieve the cooked egg whites, followed by the yolks and then mix.
- Cut the Caractère Half-Baguette in 2/3.
- Fill the sandwich, starting with the sauce, the lettuce, the vegetables and finally the boiled egg crumbs.
Chef's tip
Horseradish sauce : mix together 25g of mascarpone, 10g of mayonnaise, a pinch of salt, 10g of horseradish, sherry vinegar and chopped chives.
