- 1 Caractère Half-Baguette
- 50g tapenade sauce
- 80g Parma ham
- 20g Mozzarella
- 20g rocket
- 20g carrots
- 20g zucchini
- 10g dried tomatoes
- 6 anchovy-stuffed olives
Preparation steps
- Press the slices of ham and Mozzarella between two sheets of cling film.
- Cut the dried tomatoes into small cubes.
- Finely slice the carrots and zucchinis lenghtwise, layer them and press them in cling film.
- Cut the ham and Mozzarella preparation to fit the width and lenght of the Half-Baguette.
- Fill the bottom of the sandwich, starting with the sauce, the dried tomatoes and then the rocket leaves.
- Cut the Caractère Half-Baguette in 2/3.
- Arrange the ham/Mozzarella preparation in a wave pattern, intercalating olives and rolled up carrot/zucchini preparation.
Chef's tip
Tapenade sauce : mix together 25g of mascarpone, 10g of mayonnaise, a pinch of salt, 10g of green olive tapenade, white Balsamic vinegar and 5g of basil pesto.
