- 1 Cereals and Seeds Half-Baguette
- 50g fig sauce
- 40g prickly pears
- 40g figs
- 40g sliced smoked duck breast
- 20g Brousse cheese
- 10g red onions
- 10g pink grapes
- Lamb's lettuce leaves
Preparation steps
- Peel and cut the prickly pears into slices and the figs into quarters.
- Slice the red onion and grapes into rings.
- Crumble the Brousse cheese.
- Cut the Cereals and Seeds Half-Baguette in 2/3.
- Fill the sandwich, starting with the sauce, the lamb's lettuce leaves, the smoked duck breast and the rest of the ingredients, adding crumbs of Brousse cheese all along.
Chef's tip
Fig sauce : mix together 20g of mascarpone, 10g of mayonnaise, a pinch of salt, 1 teaspoon of fig vinegar and 10g of eggplant caviar.
