- 300g puff pastry
- 30g sugar mix (60% sucrose & 40% dextrose)
- 300g redcurrants
- 150g butter
- 300g icing sugar
- ½ vanilla pod
- 3 drops of natural green food colouring
Preparation steps
- Thaw puff pastry for 5 mins.
- Use 6, 8 and 10cm snowflake cutters to cut the pastry and dust with icing sugar.
- Lay snowflakes on silicone baking sheets and cover with another silicone sheet.
- Bake at 170°C for 12-14 minutes, open damper.
- Split vanilla pod and scrape seeds out.
- Gently combine butter, icing sugar and vanilla seeds.
- Keep 10% of the buttercream to one side and stir in a few drops of natural green food colouring.
- Use a piping bag to decorate the edge of the snowflakes with green buttercream.
- Use a piping bag to dot white buttercream in the middle of the puff pastry.
- Garnish with redcurrants.
- Gently top with 3 snowflakes.
