  • 300g puff pastry
  • 30g sugar mix (60% sucrose & 40% dextrose)
  • 300g redcurrants
  • 150g butter
  • 300g icing sugar
  • ½ vanilla pod
  • 3 drops of natural green food colouring

  • Thaw puff pastry for 5 mins.
  • Use 6, 8 and 10cm snowflake cutters to cut the pastry and dust with icing sugar.
  • Lay snowflakes on silicone baking sheets and cover with another silicone sheet.
  • Bake at 170°C for 12-14 minutes, open damper.
  • Split vanilla pod and scrape seeds out. 
  • Gently combine butter, icing sugar and vanilla seeds.
  • Keep 10% of the buttercream to one side and stir in a few drops of natural green food colouring.
  • Use a piping bag to decorate the edge of the snowflakes with green buttercream.
  • Use a piping bag to dot white buttercream in the middle of the puff pastry.
  • Garnish with redcurrants.
  • Gently top with 3 snowflakes.
