Bread & Fillings
- 6 slices of bread
- ½ sucrine lettuce
- 4 tomatoes (2 for cooking, 2 for the marinade)
- ¼ red onion (chopped)
- 3 teaspoons olive oil
- 1 teaspoon Balsamic vinegar
- 1 pinch of paprika
- Salt, pepper
- Butter (to cook the bread)
- 40 g bacon (for the filling)
Bechamel
- 15 g butter
- 15 g flour
- 250 g whole milk (25 cl)
- ½ teaspoon Dijon mustard
- Pepper
Marinated bacon
- 200 g bacon
- 1 pinch of paprika
- 2 teaspoons honey
- 2 teaspoons ketchup
- 1 teaspoon cider vinegar
- 1 teaspoon brandy
- Pepper
Preparation steps
- Prepare the soft tomatoes: plunge 2 tomatoes into boiling water for a few seconds, peel them, remove the seeds and dice. Fry the red onion in a pan with 1 teaspoon of olive oil. Add the tomatoes, season with salt, pepper and paprika, then add 1/2 teaspoon of Balsamic vinegar. Simmer for a few minutes.
- Wash, dry and chop the sucrine lettuce.
- Slice the remaining tomatoes, season with 1 teaspoon of olive oil, 1/2 teaspoon of Balsamic vinegar, salt and pepper. Put to one side.
- Cook 40 g of bacon, cut into thin slices and fry until crispy.
- In a saucepan, make the bechamel by melting 15 g of butter and mixing with flour. Gradually pour on the whole milk, stirring until it thickens. Add the Dijon mustard and pepper, and mix.
- Mix 200 g of bacon with paprika, honey, ketchup, cider vinegar and brandy. Leave for a few minutes.
- Quickly heat the marinated bacon in a pan before assembling the sandwich.
- Brown the slices of bread in a pan with a little butter.
- Spread the soft tomatoes on the first slice of bread, add the lettuce and marinated tomatoes. Add the second slice of bread, spread with bechamel and add the marinated bacon. Close with the third slice of bread.
- Decorate and serve: add some soft tomatoes, a piece of fried bacon and a slice of lettuce to decorate. Serve at once and enjoy!
