List of ingredients
- 25 brioches
- 250g butter salted
- 125g brown sugar
- 375g flour
- 50g egg
- 200g mixed nuts (hazelnut, pecan, almond, pistache)
- 200g dried cranberry
- 5 pieces of fresh figs
Preparation steps
- Thaw the Brioche
- Create a cookie dough of the sugar, butter flour and crushed nuts
- Shape the cookie dough by using a dough sheeter untill 1.5mm thick and cover the bottom of the bakingmould
- Shape the Brioche dough in untill it reaches a diameter of approx. 10 cm
- Brush the cookie dough with water and place the Brioche on top of it
- Eggwash the dough and cover it with a mixture of nuts and dried cranberrys
- Let it proof for 70 minutes at 28°C / 80% humidity
- Dry for 10 minutes and bake the products for 11 minutes at 190°C
- Cover it with dusting sugar and decorate with the fresh figs
